Uneven but OK for the price

This is an extensive grab-bag of information. The author must have spent a great deal of time assembling it, but its value is limited by several factors. It's really more like an extensively hyperlinked Web site than a book and doesn't adapt all that well to the Kindle. It's easier if you read it on a PC. The quality and accuracy of the information provided is uneven, and lack of source references makes it difficult to check it. I figure I got my money's worth out of it, but only just.

Still the definitive work

While this book is now 50 years old, it is still the definitive American work on spring creek fishing. At the time of the writing, it is true, Marinaro was unaware of U.S. spring creeks outside of Pennsylvania, this does not diminish its value.
He realized that this type of fishing was firmly rooted in the 19th century English chalkstream traditions, and built a solid work upon this foundation.
Some of what he says, in reference to flies, is either dated or irrelevant to most anglers, and his neglect of the sunken fly will disappoint a few, but his tactics cannot be faulted. Indeed, strategies touted as the most modern are clearly described, along with their pros and cons, unlike the treatment given them in some current works.
A fine piece of literature, as well as one of the most significant angling books of the 2oth century.

A MUST FOR TROUT ANGLING

I have been fishing for trout for some 50 years, mostly utilizing spinning equipment, but also fly fishing. I have never learned so much about fishing trout (be it fly fishing or spinning) as from this book. Highly recommended for anybody serious about trout freshwater angling in particular and observation of insect and fish behavior in general. And: Don't let it influence you that the book was written more than 60 years ago, it is still up to date!

Better than I'd expected

As a fisherman somewhat new to fly fishing and an avid reader and collector of books, I knew this title to be considered a classic of fly fishing literature. Also as a resident of Carlisle where Marinaro fished the Letort this book was a must-have, must-read for me. I was pleasantly surprised at the quality of the writing despite the fact that much of the book is technical, devoted to fly tying techniques and "new" (at the time) patterns. I was most interested in the accounts of fishing the limestone streams of central Pennsylvania in bygone days.

Very bummed about the appearance.

I am actually really upset about this purchase. Nothing about the Author or the speech itself is the issue. The problem is that I CANNOT READ IT!!!

I have a Kindle Fire HD8 and for whatever reason the majority of the pages come up too small, or the font color just blends in too much.

I will admit that this could be an ID10T error, and if someone could show me the way I would be happy to follow, because I love this speech or at least the few small bits I have heard of it. It's what I recite to myself to myself when I am at those "What now?!?!" moments.

I need the whole speech please? Can this be fixed??

Great Message...Terrible Presentation

I purchased this book after reading an excerpt of Gaiman's speech. I was hoping that I'd like it enough to give to a new (high school) graduate as an inspirational message.

While I do love the speech, and think it has applicability beyond the arts, the presentation of the message is simply terrible. The colors and fonts used for the text are distracting at best and impossible to read at the worst. Major failures are white font on a light blue background, or layered red/aqua font which is like trying to read 3D without 3D glasses.

I definitely will not be purchasing a second as a gift, and I may actually return my current copy. I cannot at all recommend this book. It's a shame, as the message the speech conveys is an important one for anyone embarking on a new beginning (whether career, personal, or educational).

Gorgeous book filled with useful information and amazing photos!

I am a self-taught home chef. Despite learning much on my own over the years, I wanted slightly more information on technique and skill than can often be seen in cooking videos and TV shows. In comes "The Professional Chef" by the Culinary Institute of America, or CIA.

Since this book also serves as the CIA's text book, be warned, it is 1200 pages long. It is heavy and you'll definitely get a work out carrying it around. That aside, it is a stunningly beautiful book. It is filled with pages of incredibly useful information, such as various cooking methods, different proteins and their cuts, how to identify grains and spices, how to cook what, and so much more - really, everything you need to know. There are gorgeous illustrations to go along with the charts given, which makes it very easy to follow along and keep it all straight. Additionally, the back half of the book gives you recipe after recipe on basics all the way to complicated dishes. Keep in mind, since this is a text book, the recipes are scaled for 10 servings or more. So, if you are using this to cook for large parties, it's GREAT. If you don't need to cook for more than yourself and one other person, be prepared to learn how to scale down (learning is never a bad thing).

I absolutely love this book and can't recommend it enough. Considering the amount of information and the size of the book, the price really can't be beat. Perfect for the chef-in-training or someone, like me, just looking to hone and enhance their knowledge.

Remember, this is a TEXTBOOK

I think this is a wonderful book if you understand that this is foremost a textbook written for culinary arts students not for the consumer market. The quantities tend to be large, it's assumed you have access to a fully stocked kitchen, and some of the techniques only make sense if you are cooking in quantity. For example, baking recipes (and others) call for egg quantities by weight not by number of eggs. This makes sense if you are cracking 20 eggs since the degree of variability between two random groups of 20 large eggs can be enough to compromise a recipe. For a home baker, however, it is easier to list measurements of eggs by quantity--personally, I'd rather be a little off then use 1 and 1/8 of an egg. Still, its review of equipment, basic techniques, and core recipes are well worth the price of the book even if you never have the need to make a gallon of blue cheese dressing.

My all-time favorite cookbook!

We used The Professional Chef cookbook as students when I was in culinary school several years ago; it was my favorite cookbook then, and it is my favorite cookbook now. The one I purchased is a newer edition than the one I had years ago when I was first learning how to be a chef, and I think it is even better than the edition I used when I was in school. This book will teach you almost everything you will ever need to know about cooking, including: how to make bechamel or veloute, what the mother sauces are, how to make a roux, croquettes, potatoes Anna, ratatouille, or just about anything else that you could ever possibly want to know. I have an extensive cookbook collection, but this is my go- to book when I am making sophisticated, classic foods. Whether you are an amateur cook or an experienced chef this book will help take your cooking to the next level. As a long-time chef (15+ years), I really believe that if you are serious about cooking you absolutely need this book in your collection.

This is a great book. Easy to read and allows you to understand and comprehend it because it is simple.

We think as Americans that we do not have spirits to fight against, you better think again, I have seen them, I have encountered them, I have fought against them. They think they can win, but you have to let them know that you know the end of the story, Jesus Christ has all authority and power in Heaven and in Earth.
